Brownie Sundae Cupcakes

One of my all time favorite desserts is a well known classic; brownies with vanilla ice cream and some chocolate syrup. If I’m feeling fancy, I’ll add some nuts and a cherry to make it a sundae. I was wondering to myself if it was possible to turn this classic crowd-pleasing dessert into cupcakes. The answer? Yes, yes it is and they are fantastic!

My favorite frozen treat is Breyers Natural Vanilla. It’s made with simple ingredients like fresh cream, sugar, milk and Rainforest Alliance Certified vanilla beans, and it’s so delicious!

Now, about those cupcakes…

They are incredibly easy to make.

Step one: Whip up your favorite batch of brownie batter. Line a muffin tin with foil cupcake liners. I highly recommend using foil liners, as they won’t stick to your brownie cupcakes when you remove them. Fill the cupcake liners about half way full with brownie batter. Bake at 350 degrees for 15 minutes, or until a toothpick inserted comes out clean.

Step two: Let them cool completely. To speed up the process, you can put the brownie cupcakes in the freezer, which is what I did.

Step three: After the brownie cupcakes have cooled completely, remove the cupcake liner. Put a scoop of vanilla ice cream on top of the brownie. Tip: It’s best to create a flat surface on the bottom of the scoop. So make a scoop of ice cream and cut it in half, giving you two scoops and a nice flat surface to lay on top of the brownie.

Step four: Pour some hard shell chocolate on top of the scoop of vanilla ice cream. Before it hardens, sprinkle with nuts and add a cherry on top.

A couple of tips:

  • If you’re preparing these for a Birthday party, keep the brownie cupcakes in the liners. Place the half scoop of ice cream on top and freeze (for up to 2 hours). Right before you serve these to the Birthday guests, take them out of the freezer and remove the cupcake liner (if you want). Pour the hard shell on top, add the nuts and cherry.
  • If you’re making these for your family to enjoy, only prepare how many you plan to eat. Store the rest of the cupcake brownies (in the liners) in a container. When you’re ready to have another one, take the brownie, remove the liner and build your Brownie Sundae Cupcake.

Ingredients

Instructions

Three Ways to Wear Converse When on Vacation

My husband and I are celebrating 20 years of marriage this month. Twenty years!! Converse Outfit Ideas for Traveling

This was our first trip this summer and we’re planning on exploring our own city of Austin, TX for the rest. We may take a spur of the moment trip out of state, but who knows! I do know that when I travel, I like to feel both stylish and comfortable. Knowing I have a good shoe and outfits that make me feel confident, are a great way to help me put my best foot forward when out and about exploring a city with the family. It also allows me to pack less when I create several outfits from one pair of shoes, which is always a good thing!

The cottage was perfect and relaxing and so was my outfit. I love a simple black and white striped dress and I actually have several of them in different styles. They are great for traveling and the hot temperatures of summer. Not to mention they all look fantastic with white Converse! Does wearing sneakers with a dress freak you out a little? Don’t let it! You know how I mentioned I have several black and white striped dresses? Well, I have even more chambray dresses. My daughter thinks I have a problem. Ha! My problem is that I just love chambray dresses because they are so versatile. I can wear them all year round here in Texas, only needing to switch out my footwear and for the colder months, throw on a cardigan. I thought this dress was a great match with my Converse and it ended up being the perfect outfit for exploring the city we were in.

Smoked Sausage, Broccoli and Pasta Recipe

I love it when I find a recipe that’s quick to prepare and satisfies everyone in my family, don’t you? One of our favorite family meals is this Smoked Sausage, Broccoli and Pasta recipe. I’ve made it quite a bit over the years and have used just about every kind of sausage you can imagine. So when  Aidells® Sausage asked me to try out their sausage in a recipe, I knew just the one I wanted to share with you.

In the summer I have a rule when it comes to the kitchen. I like to be in it as least as possible. Less time in the kitchen means more time around the dinner table with my family. When I have a plate of pasta in front of me and a glass of wine like The Wine Group’s Trapiche Malbec, time slips away and I’m okay with that. The night I made this dish, as I was finishing up my meal I looked at the clock and realized it was almost 8 pm. During the school year, dinner is finished and the kitchen is clean by 8 pm. But summer calls for taking more time to savor my meal and the company around me.

Smoked Sausage, Broccoli & Pasta Recipe

There are a few things about this recipe I like, besides the incredible taste. You only need two pans to make it: one to cook the pasta and broccoli (yes, they’re cooked together) and one to cook the sausage and sauce. I also like the fact that it doesn’t include a long list of ingredients. Between the fresh garlic, lemon juice and zest and incredible flavor from the Aidells sausage, this dish is absolutely bursting with flavor.

Here’s how to make it.

Step one: Gather all of your ingredients.

I like to gather all of my ingredients together in one place before I even start the dish. This keeps me organized and helps my time in the kitchen go quicker. If while you’re preparing a meal you’re going back and forth between the pantry, refrigerator and stove – that’s just asking for a stressful time! So, gather up everything you need before you begin cooking.

Step two: Start the water for the pasta and broccoli. While the water is coming to a boil, slice the sausage into rounds, cut the broccoli into bite size pieces, mince the garlic, zest and juice the lemon and prepare the sauce.

Step three: When the water comes to a boil, pour in the pasta and set the timer for 2 minutes less than the required cooking time. Why? Because you’re going to put the broccoli in the boiling water with the pasta two minutes before the pasta is done. The broccoli will turn a beautiful shade of green in the water and it will cook up perfectly. You don’t want it mushy, but instead crisp tender.

Step four: While the pasta is boiling, add your olive oil sauce to a large pan and heat it up, cooking the garlic in the olive oil sauce for about one minute. Do not let the garlic burn! After the sauce has heated up and the garlic has gotten soft, add your Aidells sausage rounds.

Have you heard of Aidells sausages? Well let me tell you it is worth buying and cooking up some tasty summer dishes with. Each sausage is made with naturally smoked, all-natural chicken, real fruits & vegetables, and herbs & lively spices. Plus it’s gluten free, contains no nitrates or added hormones and it’s ready in just 8 to 10 minutes whether you sauté or grill it. I was so impressed with the flavor, that I plan on picking up even more of these from our local RANDALL’S grocery store. This is one of those ingredients to always have on hand in order to whip up some flavorful meals.

Step five: After the pasta and broccoli are done and drained, and the sausages are cooked just until browned, it’s time to throw it all together. Add the pasta, broccoli and 1 cup reserved pasta water to the skillet with the sausage and olive oil mixture.

Step six: While all of the flavors are mixing together in the skillet, grate some fresh Parmesan cheese to sprinkle over the top after you plate it. I really, really (really) recommend spending the little bit extra on the Parmesan block as opposed to the kind that comes in a can already grated. It truly makes a difference in the flavor!

Serve this dish with a nice red wine, like a Trapiche Malbec (also purchased at our local RANDALL’S), and you have a complete, beautiful and flavorful meal.

I really enjoyed the Trapiche wine. It’s from Argentina and has a very smooth flavor. It’s been awhile since I’ve purchased a Malbec and I’ve been missing out! There’s something about a glass of wine shared with my husband at dinner that makes us sit back, and really savor the moment just a little bit longer. We find ourselves spending more time on our meal and really enjoying it. As well as soaking up the conversation.

Ingredients
  1. Salt and Pepper
  2. 1 Pound of Penne Pasta
  3. 2 heads of broccoli, cut into florets (about 4 cups)
  4. 1/4 cup extra virgin olive oil
  5. 2 garlic cloves, minced
  6. 1 Tbps lemon zest, plus 1 Tbsp lemon juice (add more if desired)
  7. 13 oz. smoked sausage
  8. Grated Parmesan or an Italian cheese blend
Instructions
  1. 1. Cook pasta in salted water according to package directions.
  2. 2. In the last 2 minutes of cooking, add the broccoli florets and cook until bright green and tender. Reserve 1 cup of pasta water for sauce.
  3. 3. While pasta is cooking, whisk together the olive oil, garlic, lemon zest, lemon juice, 1/2 tsp salt and 1/4 tsp pepper.
  4. 4. Cook smoked sausage in a skillet until both sides are browned. Add the garlic mixture and cook for about 1 minute. Do not let the garlic burn! Remove from heat.
  5. 5. Drain pasta and broccoli when it's done. Don't forget to reserve that cup of pasta water!
  6. 6. Add pasta and broccoli to the sausage in the skillet. Pour over the pasta water and stir everything together.
  7. 7. Serve with grated Parmesan or a blend of Italian cheeses.

This Season’s Statement-Making Flat Sandals

Anytime someone takes a peek in my closet, they say “oh, you love shoes don’t you?!” Why yes, yes I do. I always have and always will love shoes. And if we ever move into my husband’s dream tiny house (help me), which shoes to take and where to store them will most likely be an issue. Unless we live right on the beach and then I’m pretty sure I can narrow it down to 3 pairs: flip flops for beach walking, wedges for going out and sneakers for beach running. Done.

Simple Oven S’mores with HERSHEY’S KISSES

We’ve been out of school for two weeks now and are enjoying these lazy days of summer wholeheartedly. Between sleeping in, visits to the pool and late nights watching movies; you could say we’ve fully embraced the season we’re in. 

But to me, summer isn’t summer without…S’MORES!

We love to sit around our firepit making and eating s’mores, but it has been so incredibly hot here, that even sitting by the fire at 9 pm is slightly miserable right now. (Can I get an amen from my fellow Texans?)

So my 12 year old and I did the next best thing…we broiled them! All you need are graham crackers, large marshmallows, HERSHEY’S KISSES and a couple of minutes of your time to make a tasty treat that helps make summer, well, summer.

As you can see, these s’mores are a little different than your traditional ones. But the flavor is still just as good! I saw these a few years ago either on TV or in a magazine, but I’ve actually never tried them. I’ve done a skillet s’mores dip and several from this round-up, but have not tried this simple and quick method. I like that you only have to use the oven for a few seconds, because as you probably know, marshmallows broil super quick. They can go from golden to “oh my gosh I burnt the flippin’ marshmallows!!!!” in the blink of an eye.

Here are the super easy steps to make these.

Step one: Break the graham crackers in half and place on a cookie sheet. Cut a large marshmallow in half (I tried a whole one and don’t recommend it) and place cut side down on the graham cracker.

Step two: Broil for about 60 seconds, but keep a very close eye on it! You want them nice and golden brown.

Step three: Place an unwrapped HERSHEY’S KISS on top of the marshmallow and push it down a bit.

Step four: Let the HERSHEY’S KISSES sit for a few minutes on the hot marshmallow until they start to get a little shiny. Then you know it’s time to dig in! The chocolate will be soft enough to bite into.

These were a big hit with all of us and I love how simple they are. Having recipes and ideas like these at your fingertips, can help you create happy moments with your kiddos whenever you want. It doesn’t take a complicated recipe or a well planned outing to connect with our kids.

June 20th is the first official day of the summer and the longest day of the year – the Summer Solstice. On this first official day of summer HERSHEY’S wants to encourage us to celebrate those “Hello Happy Moments” with those we love. As we’ve been preparing to send off our first child to college, I’ve found myself being very reflective lately and realizing firsthand that time does indeed fly by. I’ve been thinking back on those special moments I’ve had with her from the time she was born, up until I saw her walk that graduation stage.

Some of my most favorite memories of her are those simple moments. That time she laughed so hard she cried at the dinner table. Or the time she sat in my lap as a toddler and “read” the same book over and over and over again. Or the time I figured out that baths were her most favorite thing in the whole world and she would sit there and play forever. Or that time she received an acceptance letter in the mail from her college of choice.

In a world that seems full of hurt right now, it’s more important than ever to step back, take a moment and celebrate those “Hello Happy Moments” with our kids. It’s those intimate and personal moments with them that they’ll remember. Those are the moments that make them feel safe and secure and loved when they’re faced with a world that’s confusing.

As we come up on June 20th, the first day of summer, let’s all take a moment to promise each other we’re going to celebrate life and create happy moments when they’re least expected. Let’s choose happy shall we?
