Bacon and Spinach Frittata Recipe

Getting a meal on the table quickly and that everyone likes can sometimes be a challenge. I’ve been cooking for my family for 20 years and through that time I’ve learned there’s one type of meal I can serve where I can do no wrong. I’m talking about breakfast for dinner. From pancakes and waffles to fried potatoes and frittatas, these have become some of my go-to meals. So when I was asked me to try the new Jimmy Dean® Applewood or Hickory Smoked Bacon, it took me approximately 3 seconds to say ‘Yes!’

Because, well…BACON.

I’ve made just about every kind of frittata recipe you can imagine. From loaded baked potato to one chock full of vegetables, and they have all been flavorful and easy to whip up. One of my personal favorite ingredients in a frittata is bacon. I fry it up, cut it into large chunks and it adds such a nice element. Combine it with spinach and onions and my oh my do you have a winner.

I headed into my local Walmart with a list of my frittata ingredients: Jimmy Dean® Applewood Smoked Bacon, eggs, onion, fresh spinach, olive oil and milk. After taste testing a piece of the Jimmy Dean® Bacon and then seeing the flavor it added to the frittata, I’m not sure why I haven’t bought this before. This is a premium bacon with a premium flavor.

Bacon and Spinach Frittata
Serves 4
This bacon and spinach frittata recipe is the perfect breakfast for dinner idea. Serve it with some fresh fruit and you have a complete dinner from oven to table in under 30 minutes. Plus, it's incredibly easy to make!

Ingredients
  1. Jimmy Dean® Applewood Smoked Bacon
  2. 2 Tablespoons Olive Oil
  3. 1/2 cup diced onion
  4. 1 handful of fresh spinach
  5. 9 Eggs
  6. 1/4 cup of milk
  7. Salt and Pepper to taste
Instructions
  1. 1. Whip the eggs and milk together. Add salt and pepper to taste.
  2. 2. Fry four slices of Jimmy Dean® Applewood Smoked Bacon in a skillet. Transfer it to a paper towel lined plate. After it's cooled, cut it into big chunks.
  3. 3. Heat the olive oil in a skillet. Add the diced onion and cook until soft, about 2 to 3 minutes.
  4. 4. Add the fresh spinach, coating it with the olive oil. Cook just until it starts to slightly wilt.
  5. 5. Evenly sprinkle on the cooked bacon, making sure that the onion and spinach mixture is spread evenly around the pan as well.
  6. 6. Add the milk and egg mixture, pouring it evenly into the skillet.
  7. 7. Let it sit and cook for about 5 minutes, or until the edges of the frittata are starting to look done. (Don't worry that the top doesn't look done!)
  8. 8. After the edges of the frittata start to set, put the frittata under the broiler on high for 2 to 3 minutes, or until it cooks the top and you have a nice browned frittata.
  9. 9. Slice and serve immediately.
